Simple Salmon Salad with Avocado and Sweet Potato

I was starving when I returned from Hatha Yoga at Namastuy today. But I challenged myself to find something healthy and quick to make with ingredients we already had in the house. I’ve been trying to eat a bit more mindfully and not as randomly as I used to. Though I have always eaten decently well, I have a tendency towards free-for-all snacking. Now that I’m 46, I’m realising I can’t really do that anymore. Despite all the yoga, jiujitsu, weights, everything, my diet seems to make the biggest difference in my well being.


So, what did I find today? A can of boneless, skinless salmon, plain Greek yogurt, Dijon mustard, a lime, some sweet potatoes, and an avocado. I ended up throwing together everything except the sweet potato, which I cut into slices, and popped into the toaster for a couple rounds to use as dipping wedges. The result wasn’t pretty, but it was definitely delicious.
