Peanut Butter, Greens, Greek Yogurt Smoothie

When you're craving peanut butter, but need a vehicle besides bread to eat it with.



I love my Vitamix blender. I realize it’s a lot of money to spend on a blender, but hands down it’s worth it. Tommy and I have owned this blender for almost 10 years now, use it every day, and it’s still going strong with no problems whatsoever.


After many years of replacing cheap blenders in the past, we’ve added this to our adulting lessons learned, that sometimes you just have to pay for quality… and in the long run that’s the cheaper solution.


At any rate, we use our Vitamix to make smoothies, soups, dressings, juices, sorbet….. except for our coffeemaker, it’s the most used item in the kitchen.


But, mostly we use it for smoothies. They typically follow a formula: liquid (water, juice, milk of choice - we favour cashew), banana, greens, frozen fruit, protein (powder, yogurt, nuts, etc.). Tommy typically sticks to his tried and true, but I get bored super easily and like to experiment with flavors on any given day. Here’s something I made up for when I want a little peanut butter, but need a vehicle besides bread to put it on.

“Typical smoothie formula: liquid (water, juice, milk of choice - we favour cashew); banana; greens; frozen fruit; protein (powder, yogurt, nuts, etc.)”

Ingredients

1/2 cup Greek Yogurt, plain 1-2 tbsp peanut butter 1 banana 3/4 - 1 cup collard greens, kale, spinach (I typically keep these frozen) 1 tsp honey (optional) 1/4 cup berries (I also go with frozen here) 1 tbsp shredded coconut 1/8 to 1/4 cup soy, almond, cashew or other milk of choice


Directions:

Simply add all items to blender. Typically in the Vitamix, I put the liquid in first, but in this case, the milk is just for added liquidity, so you'll put the milk in last. Milk should be added according to thickness preference and blender functionality. Some blenders need a little more liquid to adequately blend.
